Cooking on the Road

Long-term traveling requires living on a budget, and living on a budget often means cooking your own food. As we travel we all come up with some creative ways to eat, and learn some amazing new foods – so let’s share the best.
CHALLENGE: Share a dish you’ve learned to cook abroad, or your favourite recipe you cook yourself when traveling. We aren’t looking for ‘pasta with butter’ type of dishes. We want your most creative, healthy, and delicious recipes. Write down your recipe, title your dish, and share.

I have picked up many recipes from my travels. The above one which I often make at home is based on a salad I was served in Rome. The original recipe calls for: arugula, mixed greens, cherry tomatoes, tuna, mozzarella, green olives and a dressing of olive oil and balsamic vinegar.

I don’t always add olives to it at home and arugula is not always available either, so I improvise a lot, like in the photo above.

From Greece, I picked up the recipe for grilled haloumi cheese, bell peppers stuffed with cheese and then grilled, Horiatiki salata (classic Greek salad) and Fassolatha (white beans soup). I often make the classic salad and the beans soup at home.

When I travel , I prefer to stick to salads. I like to either go to the markets to get veggies or pick some pre-packaged ones from the stores. Then I add either cheese or tuna to it and I am done. I do switch olive oil for yogurt when I travel (if I stay a week it’s not worth it to buy olive oil since most often I cannot bring it back home with me).
